We brought it into our warehouse in 2025 at 7yrs old. We then rebarreled the liquid into a new, toasted and charred American Oak barrel. The new oak barrel is 24 month seasoned, so the wood aged 2 years before  becoming a char 3 and heavy toasted barrel. The extended finishing time for a total age of 8yr results in a balanced, rich and sweet wheated bourbon. We start by using straight bourbon sourced from Indiana and rebarreling it into a maple brûlée barrel. A maple brûlée barrel is an ex-bourbon barrel that aged maple syrup, then is sent back to a cooperage. The cooperage brûlées the wet maple-syrup barrel to caramelise the sugars in the oak, reconstructs the barrel and sends them to us.
